The best place to store the fontina PDO, for those who are not lucky enough to own a winery or a suitable cold store with humidity control, is the common home refrigerator. It is a good idea to pack the slice of fontina in plastic wrap or food grade wax paper, taking care to make it adhere well on the cut side of the cheese, in order to maintain the initial moisture.
Perfectionists can wrap the slice of fontina PDO in a previously humidified linen cloth and then place it on a tray protected by a glass dome, which can in turn be housed in the least cold part of the refrigerator. It must be recalled that the optimum temperature of tasting fontina PDO is around 16 °C.
