"Maison fontina", the administrative headquarters of the Cooperative, is located in Saint-Christophe, and spread over an area of over 10,000 square metres. fontina PDO is still produced as it used to be seven centuries ago, when it was not yet called fontina but simply "cheese". However, in order to meet the growing needs of a continuously and constantly evolving market, the Cooperative has invested significant resources in adapting the ageing warehouses and facilities. The headquarters were recently renovated and expanded. At the same time, several packaging lines have been installed to allow us to offer customers fontina PDO as a whole wheel of cheese and in different packs ranging from 200 g cheese to half wheel of cheese. The latest addition is "fetta perfetta", containing sliced fontina PDO in thermoformed trays.
The latest addition in the Cooperative is an underground warehouse, adjacent to the site of Saint-Christophe, which has a total capacity of producing over 92,000 cheeses. Here, according to tradition, Asterix and Obelix take care of more than 92,000 types of fontina PDO cheese replacing the hard work of humans in the crucial and delicate stage of maturation and ageing of cheeses.
