Why is the fontina PDO preferred
The Denomination of Protected Origin (PDO) is a recognition that refers to the Community rules (EC Regulation 2081/92 - EC Regulation 510/2006) that primarily intend to protect consumers of a collective brand (e.g. fontina PDO). We must also say that this is something other than just a brand name (e.g. "Fontal" produced by Pinco); in fact it is true that in both cases we must comply with all the regulations provided for in the dairy sector. However, a PDO product must also comply with additional rules, are explained in detail in the Management Regulation which is a document published in the Official Gazzette (OJ L.148/96 dated 21.06.1996).
